Easy Fun Lunches

Hey Guys!

I don’t know about you, but i struggle to come up with lunches for my kids. Lunch is seriously the meal i dread most to come up with. If you are anything like me, then you are in luck, cause today i’m sharing some fun easy lunches i’ve created to help you out.

  1. Pizza Lunchable – Ritz crackers, mozzarella cheese, pizza sauce, pepperoni’s, olives, and sliced fresh nectarines and yogurt covered pretzels for dessert.

2. Summertime/Beach themed lunch – croissant turkey and cheese sandwich, graham crackers with blue frosting topped with s’mores goldfish, and blue punch with a scoop of vanilla ice cream.

3. Halloween/Orange themed lunch – Sandwich cut into a pumpkin shape, mandarin oranges, carrots w/ ranch, goldfish, orange Jell-O, Oreo, and pretzel covered in orange candy melts top with green m&m.

4. Rainbow themed lunch – PB&J sandwich w/ heart shaped filled with sprinkles, skittles, color goldfish, strawberries, oranges, pineapples, grapes, and blueberries.

5. Pesto Pasta – Pasta with pesto sauce, diced tomatoes, black olives, and parmesan cheese. Raspberries, pretzels, and Nutella.

6. Orange themed lunch – Macaroni and cheese, Annie’s Cheddar Bunnies, Orange, and orange jelly beans.

7. Green/St. Patrick’s Day themed lunch – Sandwich w/ heart shaped filled with sprinkles, guacamole flavored chips, Skittles, mini marshmallows, lucky charms, sour cream and onion Pringles, and a sugar cookie.

8. Easter/Bunny themed lunch – Grilled cheese sandwich, Oreo’s, Marshmallows, Veggie Chips, and trail mix.

9. Spaghetti lunch – spaghetti pasta with sauce and cheese, steamed broccoli, breadstick, and salad.

10. Apple themed lunch – Sandwich shaped as an apple, apple sauce, apple slices, and an Oreo.

Coffee Recipes

Hey Guys!

As you all know, i love coffee! With this whole Covid-19 thing going on i stopped going to coffee shops and started making my own fancy coffee at home. Today i’m sharing 2 of my favorite recipes.

Iced Caramel Macchiato

  • 2 Tablespoons Vanilla Syrup
  • 1 cup of ice
  • 1 cup of milk
  • Cold coffee
  • Caramel sauce

Add the vanilla syrup to the bottom of your cup. Top with ice, milk and coffee. Finally add a drizzle of caramel sauce to the top and enjoy! So yummy & easy to make!

Crockpot Pumpkin Spice Latte (perfect for Fall)

  • 6 cups of coffee (cold)
  • 5 cups of whole milk
  • 1 cup of heavy cream
  • 1/2 cup of pumpkin puree
  • 1/2 cup of sugar
  • 3 teaspoons cinnamon
  • 4 teaspoons vanilla extract
  • whipped cream (optional)

Pour coffee, whole milk, and heavy cream into crockpot. In a mixing bowl, mix together pumpkin, sugar, cinnamon, and vanilla. Add pumpkin mixture to crockpot, and whisk to combine. Cook on high for 2 hours. Then ladle into a cup, add some whipped cream and cinnamon on top and enjoy!

Healthy Valentine’s Day *Kid Friendly* Menu Plan

Hi Guys!

I know how hard it is to come up with a healthy meal for my family, especially holiday meals. That’s why i’ve decided to write up a healthy menu plan for this Valentine’s Day.

Before, for Valentine’s Day, we would most likely have donuts for breakfast. Don’t get me wrong i absolutely love a good donut here and there, but they aren’t healthy and they are packed full of sugar, and they don’t fill you up.

Instead, for a healthy breakfast option, how about Banana Oatmeal Pancakes!

You could even make them in a heart shaped mold, to make them more festive. What’s great about these pancakes is they are; sugar-free, oil- free, gluten-free, and dairy-free.

For lunch, the Banana Dog Bites are super yummy!

We have been making these for years, and all my kids love them. They are also super simple to make (only 3 ingredients)!

**If you are not a fan of peanut butter and bananas, you could do a tortilla roll up instead, with deli meat, cheese, and your favorite condiment (i love mustard on mine).**

Where we live Valentine’s Day is always chilly, so warming up with a hot bowl of soup always sounds like a good idea. This Cheeseburger Soup is a big hit with all of my children.

Packed with veggies, even a secret one that was blended up that my kids still don’t know about (Shhh!), it’s creamy, delicious, and can be made in a pressure cooker!!

Of course it’s Valentine’s Day we are talking about ,so i can’t forget about dessert. Chocolate Covered Strawberries will always be a classic Valentine’s Day dessert for me.

You can make them healthier by using a dark chocolate, and skipping out on the sprinkles.

Healthy Super Bowl Foods

The Super Bowl is coming up this Sunday, which means if you are trying to eat healthy and lose weight, all your hard work can be destroyed in one afternoon!!  This year i’m looking into trying out some new healthy recipes i can make for Super Bowl Sunday, that won’t leave me feeling sad, discouraged, and just plain yucky come Monday!
